Job Description

Rita's Hospitality Group is looking to add enthusiastic and skilled chefs to our growing Private Aviation Division. At Rita's we have developed a reputation as a premier caterer in the Greater Boston Area and with that comes an expectation of excellence in all that we produce. The Private Aviation Chef's role report directly to the Executive Chef and Sous Chef.

As a Private Aviation Chef, you will be responsible for providing high-quality culinary experiences tailored to the tastes and preferences of private jet travelers. You will create gourmet fine dining meals of all cuisines, snacks, and refreshments while ensuring the highest standards of food safety, presentation, and taste. Attention to detail, creativity, and flexibility are key attributes for success in this role.

They will also have experience working in a high-volume, fast-paced kitchen environment working both independently and with a team.

MUST BE AVAILBLE FOR FIRST AND SECOND SHIFT/PM SHIFT START TIME AS EARLY AS 2AM

Responsibilities:

Menu Development

  • Create customized dishes for each request, incorporating seasonal ingredients, dietary needs, and special requests.
  • Ensure menu offerings align with client preferences, flight duration, and logistical constraints.

Culinary Preparation

  • Procure high-quality ingredients from reputable suppliers, considering freshness, sustainability, and dietary requirements.
  • Prepare and cook meals according to established recipes, techniques, and specifications.
  • Accommodate special dietary needs such as gluten-free, vegan, or kosher options as requested.
  • Prepping ingredients and meals during down time
  • Ensure that any additional prep for the following day is completed before ending shift

Food Presentation

  • Plate meals with meticulous attention to detail, focusing on aesthetics, balance, and visual appeal.
  • Coordinate and ensure timely and elegant presentation of meals during flight.
  • Garnish dishes creatively to enhance their visual appeal and elevate the dining experience.

Food Safety and Hygiene

  • Adhere to strict food safety standards and regulations, ensuring proper handling, storage, and sanitation procedures are followed at all times - before, during, and after shift
  • Maintain cleanliness and organization in the kitchen area, adhering to regulations and guidelines.
  • Monitor and maintain inventory levels of perishable and non-perishable food items, minimizing waste and ensuring freshness.

Collaboration and Communication

  • Work closely with other staff members to coordinate meal service timing and logistics.
  • Communicate effectively with clients to confirm menu selections, address any concerns or special requests, and provide exceptional service.
  • Collaborate with other culinary professionals or suppliers to source unique ingredients and stay informed about culinary trends and innovations.

Flexibility and Adaptability

  • Remain flexible and adaptable to changes in flight schedules, client preferences, or unforeseen circumstances.
  • Demonstrate resourcefulness in creating culinary solutions within the constraints of the aircraft galley and equipment.
  • Willingness to accommodate irregular hours to meet the needs of private jet travelers.

Qualifications:

  • Proven experience as a Chef in upscale restaurants, hotels, or private residences, with a focus on gourmet cuisine.
  • Culinary degree or equivalent certification preferred.
  • Strong knowledge of culinary techniques, flavor profiles, and international cuisines.
  • Familiarity with dietary restrictions and preferences, including vegan, gluten-free, and kosher requirements.
  • Excellent communication and interpersonal skills, with the ability to interact professionally with high-profile clients and colleagues.
  • Attention to detail and a passion for delivering exceptional culinary experiences.
  • Ability to work efficiently in a fast-paced, high-pressure environment while maintaining composure and professionalism.
  • Flexibility to accommodate irregular schedules, including weekends and holidays, as needed.
